A brewed cup of coffee is about 97%
water…so the importance of clean, quality water is imperative. If your tap
water is suspect with off tastes or odor use filtered water or bottled spring
water. Make sure that the temperature of your brewing water is between
195-200 degrees F to insure the best extraction and a flavorful cup.
Use the freshest possible coffee. Oxygen in the air we
breathe robs coffee of its freshness and flavor so coffee is best ground
fresh. If you must store your coffee do so in an airtight container, kept
in a dark, dry location. The freezer works well for this, preventing
evaporation, as long as the container is airtight to prevent any absorption of

French Press or Percolator — Coarse, slightly coarser than Kosher
Drip or Paper Filter
— Somewhat sandy in texture
An overly coarse grind will result in a weak
brew or require an excessive amount of coffee. Too fine a grind will
result in over extraction and a bitter cup.
How Much Coffee
Use approximately 1 rounded tablespoon for every 6
ounces of water.
